The Fermentable Harvest

o Brief: Fermentation is a beautiful thing, and when faced with bumper fruit and veggie crops preserving and sharing the harvest is the key! We will look at many easy to grow crops for our region and the variety of ways they can be preserved through fermentation. Let’s dive into the riches of the culture of fermentation from a historical and holistic perspective.

Classes can be specific to a product like hard cider, fermented teas or broad to include many types of fermentation.

o Hands on: Simple Mixed Veggie Sauerkraut & Kombucha/Jun Making

o Take home material: Plant list & use handout with recipes, Quart of Sauerkraut to Ferment, a Kombucha/Jun Scoby

o Length: 2-4 hours/1 day/weekend
